Straightforward question: Would 8 bluespotted sunfish and 3 speckled madtoms be overcrowding a well-planted 75 gallon tank?
I haven't really seen territorial behavior in these before, but I've had at most four sunfish in this tank with no catfish.

That would not be crowded at all.

With that number of fish the first limiting issue will be male territories if they opt to breed. You will be able to relate to us how much area a given male will defend. If the males decide to have territories in close proximity to each other at territories are small enough, then it may allow for non-territory portions of tank.
