Is this safe for the fish?

I have 2 sunfish (I'm pretty sure are green). They are starting to get silvery/blue spots where the adult ones have blue marks on the cheeks. Would it be ok to remove the larger of the two set him on a white paper towl, snap a few pics and replace him in the tank?

Almost anything would be better than placing the fish on an absorbent towel. This is likely to damage the slime coat. Do you have a small tank to place the fish in and snap a photo?

Holding him in a wet hand or better yet a wet net would work. A small tank like a 2.5 gallon would be best.
