I wouldn't keep any of the larger species
The problem is that most (if not all) native crayfish eventually get rather large

It's going to be pretty tricky to keep water quality stable, since that's maybe a gallon of water.You might be able to manage a ghost shrimp, but I'm pretty sure most crawdads are too messy for such a small amount of water.
