Fat sleepers are innocuous and attractive.  Easy to keep but rather shy.  They will take about any food you are prepared to offer.  One of my favorite natives.  Innes wrote about them.

how big do they get in an aquarium, would they eat my shiners, flagfish and topminnows in a community tank, as the lone big guy?

Don - the Mayan is an attractive but aggressive cichlid that gets to be 12" or more in length.  I have never attempted to keep them in a community tank but based on their behavior I would not take the chance.  I would treat them like any other aggressive cichlid - alone, bonded pair, or slightly overcrowded - and hope for the best.
