I have an empty 75 gallon and 1 each of young warmouth and green sunfish. From my understanding it would be better to add some more sunfish in there to distribute aggression long term. Assuming the tank is well filtered and has heavy amounts of cover for fish to retreat and claim territory. What other sunfish/natives would people put in there (I'm already setting up a second tank just for Longear)? Also open to non native cichlids but I think a Jack Dempsey or Texas would get too big to be in there with the sunfish.

I’ve kept Warmouth and they are generally pretty laid back for a Lepomis. They tend to pick a favorite spot and just lurk. That said, they are also tough enough to hold their own if push comes to shove.
I wouldn’t rule out the possibility that combo might work in your scenario.

I've had similar experiences with warmouth as Jason. 75 gallons is plenty of space for those two to be relatively comfortable as long as you set up plenty of structure for refuge and to break up line of sight. No need to add more sunfish unless you really want to. Both of those fish have large mouths, so if you add other natives, you need to be okay with the occasional fish that goes missing. You can reduce this by having larger and fast minnows like some of the larger Cyprinella shiners or even Nocomis.
