Ok. I've got three 4ft long tanks. I would like to get a parasitic minnow, such as bluehead shiners, that are parasites of sunfish nests. Does anyone know if a tank could be set up with the minnow and the host-fish. Would this work, or would the sunfish eat the minnows?

Longears WILL eat them. One possible solution would be to separate the two species by a barrier that only the blueheads can pass through.

Nice idea. I'll try it.
