you should be able to move the fish over to flake food soon, shrimp are great food, but probably not as a staple. I feed my Orange spots hikari cichlid gold as a staple and i supplement there diet 2 times a week with ghost shrimp (that i catch, not from a lfs) and frozen bloodworms.
the trick is to get it eating off the top of the water, it should not be that hard, most sunfish eat insects from the surface, its instinct, they just have to recognize it as food

I have a small oe like that in my 55 and I had no problem converting it to flake
and I have a slightly larger red breasted that is eating pellets
