what type of plants would sunfish prefer in a tank?

They're not particular. Anything that provides cover and breaks up line-of-sight is nice- vertical or floating stem plants like anacharis, hornwort, bacopa, pennywort, etc., or large rosette plants like vallisnerias or swords are great. Small fish also appreciate floaters with long roots, such as water lettuce or water hyacinth.
