I am considering making my 300g tropical tank into a Pumpkinseed sunfish tank and had some questions. I've read on here that people have kept sunfish with plecos with no problems, but how about hognose brochis? Or is there a native scavenger that would be compatible? How many sunfish would be comfortable in this size tank? How rough are the sunnies going to be on the plants?

Not sure that I agree with bullheads being "dirty" or "scavengers". They are efficient nocturnal predators that cruise around and sense their prey in the dark with those famous catfish whiskers.

But wouldn't Bullheads wreak havoc with my plants? I'd like to keep this tank well planted.

Not as much as sunfish, if the males try to spawn.
I also disagree about catfish being dirty. No more than other fish. In the wild they may be scavengers but in a tank, not so much.

No. But they do fine in mixed sex groups as long as you maintain 1 male to 2-3 females. Males are much more colorful too.
