I believe addition of Iodine would do the trick.I've had and kept crayfish in my fish tanks that have molted before but is there a way to artificially stimulate crayfish to molt in aquaria?

Why boil and peel them? If they're softies, just dredge in flour/cayenne/salt/pepper and fry 'em up. Mmmm.

Soft shelled 'crabs' are 'the bomb' for fishing.
Much more so than ones not molting.
Especially for carp, catfish and black bass.

so i collected bunches of little ones, and each day i pinched off one cray's large claws.
they usually molted about 2-3 days later, so i had a steady supply of softie queen snake food.
