Ok, I've heard that they should be kept above the substrate, then others say it should be buried in the substrate. Which is correct? Does it matter?

I have 4 in my tanks 3 are above and 1 is buried, the ones above the substrate grow better than the one buried.

If you ever bury them to keep them submerged, do not bury them more than halfway. The roots sprout from the crown and not the tubers. The tubers may fall off without killing the plant.
If the plant floats naturally, let it be. It grows faster that way as it is closer to the light. Substrate type is not important as long as it is getting hte nutrients it needs.
