How large are your yellow perch? Plump animals easiest to sex.

Wow news to me! I've always sexed my perch in the spring just before spawning by squeezing less plump fish that are usually males and will exude milt. The females tend to be very plump with eggs and of course no milt comes out. I will be taking a closer look at my perch from now on!

I do know one thing that is accepted by some as a breeding difference that is not necessarily the case: It's said the males have bright red/orange fins and the females more drab and yellow. I have seen females with ventral fins as bright orange/red as any male and they were obviously females with very distended abdomens from ovaries.

Well contrary to us cold water does the trick. :D Of course you probably know this and are just kidding around. But for those of you that don't know, a certain time period of cold water (as in winter) is needed for ovary production in female perch. Not sure about the males.
